Happy President's Day! Please enjoy this recipe (I know I did!) and the ridiculous amount of photos taken to show each step. This is by far the most detailed I've been and most likely the most detailed I'll ever be again, so do take advantage! I really enjoyed the flavor of this recipe despite my typical aversion to anything with melted cheese on top (I know, I know, I'm weird, especially because I am Mexican and I'm planning to marry an Italian...I've heard it all and yes I understand that this is unfortunate...). But seriously, excellent flavor, great portions. This recipe really is perfect for two--or for two servings (a girl's gotta eat, I don't judge!).
Chicken Parmesan
4 chicken breasts cut into strips
2 eggs
1/2 c parmesan cheese
3/4 c dried breadcrumbs
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1 tbsp olive oil
1 16oz can tomato sauce
1 c shredded mozzarella cheese
Preheat oven to 400 F.
In a medium bowl, lightly beat eggs.
In another bowl, combine parmesan, breadcrumbs, salt, pepper, and garlic powder.
Dip chicken strips in egg
Then in breadcrumb mixture
Place on a baking sheet.
In a large skillet over medium heat, heat olive oil.
Spread one cup tomato sauce in a 9 x 13 inch baking dish.
Place chicken on top of sauce.
Top chicken with remaining sauce and mozzarella.
Bake 10 minutes, until cheese is completely melted.
